How it goes

  1. Preheat oven to 180°C / 350°F and grease a 12-cup muffin tin.

  2. Whisk eggs with milk, salt, and pepper.

  3. Stir in chopped spinach and crumbled feta.

  4. Divide between the muffin cups, filling about ¾ full.

  5. Bake for 18-22 minutes until set and lightly golden.

What she’d tell you

Bake a tray of these on Sunday and you have breakfast all week. A grandmother thinks ahead, kochanie!

If you haven’t got it

  • Feta Cheese

any crumbly cheese; cheddar makes them milder

  • Spinach

any wilted green: chard and kale both hold up well

Keeping it

Four days in the fridge in a closed box, and they freeze for two months. This is why we make them.

Twenty seconds in the microwave from the fridge, a minute from frozen. Or eat them cold: they are good that way too.

What’s for dinner tomorrow?
