How it goes

  1. Preheat oven to 200°C / 400°F. Toss cubed sweet potato with olive oil, cumin, smoked paprika, and salt. Roast on a lined tray for 20 minutes until tender and caramelised.

  2. While the potato roasts, warm the black beans in a small pan with a pinch of cumin and salt. Mash lightly with a fork: not completely smooth, just a little chunky.

  3. Warm the corn tortillas in a dry pan, 30 seconds per side.

  4. Build the tacos: beans first, then sweet potato, then avocado. Squeeze lime juice over everything. Add sour cream and cilantro if you like.

What she’d tell you

The colours of these tacos (orange, black, green) make Babcio happy before the first bite. Good food should look like a celebration. These do.

If you haven’t got it

  • Sweet Potato

butternut squash, cut the same size

  • Corn Tortillas

    small flour tortillas

Keeping it

The filling keeps four days. Tortillas are warmed fresh: a filled taco left overnight is a soggy one.

The filling in a pan over medium. Tortillas over a flame or in a dry pan, thirty seconds a side.
