How it goes

  1. Whisk soy sauce, honey, vinegar, garlic, and ginger for the glaze.

  2. Steam or microwave broccoli until just tender, 3-4 minutes.

  3. Sear salmon skin-down 4 minutes, flip, brush with glaze, cook 2 more minutes.

  4. Pour remaining glaze over salmon and broccoli, sprinkle sesame, and serve.

What she’d tell you

Salmon was a rare treat when Babcio was young. Now I cook it every week and feel rich every time.

If you haven’t got it

  • Honey

maple syrup, or brown sugar dissolved in the soy

  • Broccoli

tenderstem, pak choi, or green beans

Keeping it

Two days, and cooked fish means two days and not three. Keep it covered and cold.

Low oven, covered, for eight minutes. Or eat it cold: teriyaki salmon is very good that way.
