How it goes

  1. Heat the oven to 200°C. Prick the potatoes all over, rub them with oil and roll them in salt.

  2. Bake them directly on the shelf for 70 minutes, until a knife goes through with no resistance.

  3. Warm the chilli through gently on the hob for 10 minutes.

  4. Split each potato, push the ends towards each other to open it up, and fluff the inside with a fork.

  5. Spoon the chilli in and finish with cheese, soured cream and spring onions.

What she’d tell you

A chilli that fed eight on Sunday will feed four again on Wednesday, and putting it on a potato makes nobody feel like they are eating leftovers. The skin is the point: do not wrap them in foil.

If you haven’t got it

  • Cooked Chilli con Carne

any leftover stew, goulash, or a tin of beans warmed with smoked paprika

  • Sour Cream

    Greek yogurt

Keeping it

The chilli keeps four days; bake the potatoes fresh.

A baked potato reheats poorly. This is one to make on the day.
